The Best Ever Lentil Sloppy Joes

Ingredients
  

  • 2 tbsp olive oil
  • 1/2 cup shallot, small diced
  • 1/4 cup green pepper, small diced
  • 2 garlic cloves, minced
  • 1 cup vegetable broth
  • 1/4 cup diced tomatoes
  • 1/2 cup tomato sauce
  • 1 tsp yellow mustard
  • 1 tbsp vegan Worcestershire sauce
  • 2 tbsp apple cider vinegar
  • 1 tbsp agave
  • 1 tsp chili powder
  • 1/2 tsp smoked paprika
  • Sea salt and black pepper, to taste
  • 1/2 cup dried red lentils, rinsed and drained
  • 2 gluten-free hamburger buns

Optional toppings:

  • 1/4 cup shredded vegan cheddar cheese
  • 1/2 avocado, sliced
  • 2 tbsp jalapeƱo peppers, sliced

Instructions
 

  • In a large saucepan, heat the olive oil over medium heat. Add the shallot and green pepper. Cook for 4 to 5 minutes, or until soft. Add the garlic and cook for 1 minute, or until fragrant.
  • Add the vegetable broth, tomatoes, tomato sauce, mustard, Worcestershire, vinegar, agave, chili, paprika, and salt and pepper. Add the lentils and stir to combine.
  • Bring to a boil, then reduce the heat to medium-low. Simmer for 30 minutes, or until the lentils are tender and the sauce is thickened.
  • Divide the lentil mixture between the hamburger buns. Top with desired toppings, if using, and serve.
