Maple Balsamic Brussels Sprouts

Ingredients
  

  • 1 lb Brussels sprouts, washed and sliced in half lengthwise
  • 1/2 medium red onion, diced
  • 1 medium apple, diced
  • 1/2 tsp sea salt
  • 1/2 tsp black pepper
  • 1 tbsp avocado oil or coconut oil
  • 1-2 tbsp pure maple syrup
  • 1-2 tbsp balsamic vinegar
  • 1/3-1/2 cup chopped walnuts
  • Fresh thyme, to taste

Instructions
 

  • Preheat the oven to 375 degrees F.
  • In a large cast-iron skillet, combine all ingredients and toss.
  • Bake for 30-35 minutes, or until the brussels sprouts are fork-tender.
  • Remove from the oven and allow to cool for 5 minutes.
  • Top with the thyme, then serve and enjoy!
