Double Chocolate Chip Blondie Loaf

Ingredients
  

  • 1/4 cup melted coconut oil, plus extra for greasing
  • 4 chia seed eggs (4 tablespoons chia seeds + ¾ cup water)
  • 1 cup almond, coconut, or cashew milk
  • 1 1/2 tsp Madagascar vanilla, non-alcoholic flavoring
  • 1/4-1/2 cup coconut sugar
  • 2 1/2 cup almond flour
  • 1/2 cup coconut flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 cup dark chocolate chips
  • 1/4 cup chopped walnuts

Instructions
 

  • Preheat the oven to 350 degrees F.
  • Using coconut oil, grease a loaf pan and set it aside.
  • In a medium-sized bowl, mix together the wet ingredients until well-combined.
  • In a large bowl, mix together the remaining ingredients, except the chocolate chips and walnuts.
  • Add the wet ingredients to the dry ingredients and whisk until smooth.
  • Fold in the chocolate chips and walnuts.
  • Pour the batter into the loaf pan and bake for 50-60 minutes.
  • Remove the loaf pan from the oven and allow it to sit for 10 minutes.
  • Slice, serve, and enjoy!
