Cauliflower Tabbouleh

Servings 1 small bowl

Ingredients
  

  • 1 head chopped cauliflower
  • 1 cup chopped cherry tomatoes
  • 1/2 cup sliced kalamata olives
  • 1 sliced cucumber
  • 1 bunch parsley
  • Juice of a ½ lemon (add more if you want)
  • 1/4-1/2 cup olive oil
  • 1-2 tsp sea salt
  • 1-2 tsp pepper

Instructions
 

  • Add all the ingredients together in a large bowl, mixing to combine.
  • Cover and place bowl in the refrigerator until ready to serve.
  • Top with green onions. Enjoy!
