Are you a brownie or a blondie person? Personally, I LOVE dark chocolate and all the health benefits it offers. But, once in a while, I find myself craving a blondie. And when I do, I make these incredible Chocolate Chip Chickpea Blondies!
Not only do they combine my love of dark chocolate with a craving for a gooey, delicious blondie, but they’re also free of toxic chemicals, artificial sweeteners, and inflammatory white sugar. Talk about a win-win!
But these Chocolate Chip Chickpea Blondies offer even more health benefits than just lacking harmful ingredients. So, let’s take a quick look at what makes this chickpeas blondies recipe so great.
First, as we discussed recently in the Dark Chocolate Dessert Hummus with Hazelnut recipe, chickpeas are a great source of plant-based protein. As a result, they’re known to support satiety and help reduce in-between-meal snacking.
So, even though these chickpea blondies are a dessert, they’ll still help cut back on eating more junk food. How incredible is that?
Not convinced? Well, check this out: A 2010 study followed 42 participants and discovered that when they supplemented their diets with chickpeas, they reported eating less junk foods and feeling more satisfied. 
But that’s not the only benefit of indulging in these Chocolate Chip Chickpea Blondies. This chickpea blondies recipe also uses cashew butter.
Here’s why that matters: Cashews contain high amounts of monounsaturated fatty acids (MUFAs), which are known to promote both heart health and satiety!
Plus, regularly eating nuts has been shown to boost your metabolism and help you burn up to 15 percent more calories each day! 
On that note, the last featured ingredient I want is another nut—walnuts! And that’s because they also support not only overall health and wellbeing but also weight loss.

Chocolate Chip Chickpea Blondies
Time: 40 minutes
1¼ cup chickpeas, drained and rinsed
½ cup unsweetened creamy cashew butter
⅔ cup agave
2 teaspoons vanilla extract
¼ cup quinoa flour
1 teaspoon baking powder
½ teaspoon baking soda
¼ teaspoon sea salt
½ cup vegan dark chocolate chips
¼ cup roughly chopped raw walnuts
1. Preheat the oven to 350 degrees F. Grease or line a loaf pan and set aside.
2. In a food processor, combine the chickpeas, cashew butter, agave, and vanilla. Process until completely smooth.
3. Add in the flour, baking powder, baking soda, and salt. Pulse to combine.
4. Transfer the batter to a large mixing bowl. Add the. chocolate chips and walnuts, and stir to incorporate.
5. Transfer the batter to the prepared loaf pan. Spread into an even layer.
6. Next, transfer the pan to the oven. Bake for 28-30 minutes, or until a toothpick inserted into the center comes out clean.
7. Remove from the oven and cool for 10-15 minutes. Slice into 8 blondies.
Tip: Other mild white beans, such as navy or great northern beans, will work with this recipe as well to make white bean blondies.
